Ale is brewed with different yeast as a Lager. The yeasting temperatur is higher and as the yeast is swimming up, it is called upyeasting beer, compared to the Lager what is an downyeasting beer. At higher temperatures more fruity compounds are produced, so the ales are more tasty.
The special malt leads to a good mouthfeeling and a darker colour. Hop is used in a higher amount.
In former times the upyeasting beers war more sensitive, but now with specially produced yeast, everything is running perfect. Moreover to brew ales is more economic in warmer countries, as beer cooling of Lager and Pilsner takes a lot of energy.
